Areas of interest

Dimitris’s research is in food biotechnology and aims to address key challenges for the transformation towards a more sustainable food system. Main drivers include the elimination of food loss and waste, the stimulation of the bioeconomy, the efficient utilisation of natural resources, and the development of more sustainable and healthier foods.

The main topics of focus are:

  • Valorisation of food processing side-streams and wastes through industrial biotechnology and chemical/physical fractionation to produce functional components, e.g., polysaccharides, proteins.
  • Bioprocess development for the microbial production of platform and speciality chemicals, e.g., lactic acid, exopolysaccharides, colourants.
  • Microbial production, encapsulation, and delivery of probiotic microorganisms
  • Enzymatic synthesis of prebiotic oligosaccharides with applications as functional food ingredients and gut bioactives

Postgraduate supervision

Research funding and postgraduate supervision

Dimitris has been awarded research funding from various agencies, including the UK Biotechnology and Biological Sciences Research Council (BBSRC), Global Challenges Research Fund (GCRF), Innovate UK, European Institute of Innovation & Technology (EIT) Food, as well as industry. He has supervised more than 20 PhD students to completion.
